Jessie’s Pizza Salad Recipe and Fast Tabata Video

I may not be as fabulous as Emma, (she is) but I’m going to try my best to fill her spot today :). When Emma contacted me about a week ago to share a recipe for you guys, I was completely taken back by surprise… I mean wouldn’t you if an awesome, sweet & marvelous blogger asked you?
Had I not been both inspired by Joshua and I’s anniversary two years ago or craving pizza & veggies last week, this recipe would never of happened. Lets take a second and pretend it’s December 2012. Joshua and I headed to a nearby resort here in Kuwait for the weekend to celebrate our 4th wedding anniversary. We originally had plans to dine and indulge in a sensational night of seafood… that was until my indecisiveness and cravings took over. While on a walk earlier that evening checking out what all they had to offer we passed a new-to-me pizza joint called Pizza Express. Now don’t go imagining a beat up restaurant with so-so food, picture a restaurant with stunning design, great music, and exceptional looking food. Got it in your mind? Okay great, because that’s exactly what Pizza Express resembles. I think Joshua had a slight idea from that point on that we’d be saving seafood for another night – anniversary or not. LOL.
Although though this wasn’t the best pizza Ive ever eaten, I can say Pizza Express does do a damn good job (Ha Ha). Not only was the customer service excellent, but Joshua and I both left with happy, satisified, and filled stomachs.
I don’t have the slightest idea why it’s taken me so long to recreate the pizza (well, at least something similar)… but hey at least I’ve finally done it.. right?
Leggera Tomato & Cheese Pizza – Serves One
  • 1 medium sized pizza crust (I used Udi’s Pizza Crust)
  • 1/4 mozzarella cheese
  • 2 tablespoons tomato and basil feta cheese (crumbled)
  • 3 tablespoons marinara sauce
  • red and green bell peppers, diced
  • 5 cherry tomatoes, halved
  • cucumber, diced
  • 1 cup arugula
  • 2 teaspoons lemon juice
  • 1 teaspoon balsmaic vinegeratte
  • pepper, dry basil (optional)
  • parmesan cheese (optional)
  • Preheat oven according to temperature on pizza crust package. Spray a baking sheet with non-stick cooking spray
    • Lay your pizza crust on the counter top and place a smaller size bowl in the middle.
    • Cut out a circle in the middle of your crust  (you won’t be using the center part)
    • Spread marinara sauce evenly around the remaining pizza crust
    • Mix together mozzarella cheese, feta cheese, pepper, and dry basil
    • Sprinkle evenly over marinara sauce
    • Place in oven for 5-7 minutes
    • While your pizza is cooking, combine your salad ingredients; diced peppers, diced cucumbers, and halved cherry tomatoes
    • Mix lemon juice, balsamic together – seasoned with pepper and basil
    • Take pizza out of oven, and place it on your serving plate
    • Place your prepared salad in the middle, and drizzle with your lemon/balsamic dressing
    • Top all with grated parmesan heese (optional)

    Whoa! That video is intense! I run higher mileage than most people drive, but you are even making me feel tired! Impressive job lady! Love the video! Of course, I love Jessies pizza too! She is the queen of providing nutrition that is great for training and feeling your best. I love pizza express, and this is definitely a great recreation of it! Definitely need to try it sooner rather than later! Thanks ladies 🙂
